Team Building With Taste

Last week I got to be apart of an event with DFW Bloggers at Team Building With Taste. The event teaches team building while competing in a cooking competition. You are split up into four teams and then paired with either a chef or sous-chef. Each team gets a recipe that you will make in a selected amount of time.

Team Building with Taste

During our time we had a surprise ingredient presented to us, our chef taken away for five minutes, and verbal communication with each other taken away for five minutes. You get to choose your team name so my team chose “The Sexy Buns” since we were making Arancini with Arrabiata Sauce. I was able to make the sauce for the dish.

Making the Sauce

Ingredients (for the Arancini)

6 cups chilled risotto

4 oz. fresh mozzarella, cut into ½ inch cubes

1 cup flour

4 eggs, beaten

2 cups panko crumbs

Ingredients (for the sauce)

¼ cup olive oil

2 garlic cloves, minced

½ teaspoon red pepper flakes

1 quart diced plum tomatoes

½ cup white wine

1 cup basil, thinly sliced

Salt and pepper

Instructions

For the Arancini:

Roll chilled risotto into 24 (1 ½ inch) balls using wet hands. Poke a small hole in the middle and insert a piece of cheese, the re-roll into a ball.

Put flour, eggs and crumbs into 3 separate bowls. Dredge risotto balls in flour, shaking off excess. The dip in the egg, letting excess drip off, then into the crumbs and transfer to a lined baking sheet.

Fry the risotto balls in deep fryer for about 3 minutes or golden brown. Drain and allow to set for a minute. Serve on a pool of warm sauce.

For the Sauce:

Heat oil in a large skillet over medium-high heat. Add garlic and red pepper flakes, sauté 1 minute. Add tomatoes with juice and wine; bring to a boil. Boil until sauce thickens, about 8 minutes. Stir in basil. Season to taste with salt and pepper. Keep warm for service.

Team Building With Taste has a 10 people minimum and they can also do parties up to 100. They have three different events with different price ranges. 13 years old is the age minimum to be in the kitchen. Since you are working in an industrial kitchen it is required that you wear closed-toe shoes and that all long hair is tied back.
